Chef Fhred returns to the Philippines with the food, stories and hospitality that shaped Palay in Melbourne.

This is Palay Philippines at Sabi Sounds: a focused five-course menu shaped by regional Filipino food memories and re-edited for Manila without drowning out where they come from.

The food carries memory. The room belongs to Sabi Sounds—warm analogue sound, a Saint C Calamansi Spritz, conversation and a little beautiful chaos after dinner.
